Dairy products are produced from milk which is produced by the mammary glands of female mammals and is the primary source of nutrition for newborns.
In industrial societies cow's milk is the usual source of dairy products like cheese, yogurt, ice cream and butter. Goats, sheep, horses, water buffalo and yaks, are also sources of milk.
Eggs are not dairy products but are often found near milk products in grocery stores.

Cheese, the result of curding milk, is an excellent method of preserving the food value of excess milk from cows, buffalos, goats and sheep.
Remember Little Miss Muffet? She sat of a tuffet, eating her “curds and whey” (a form of cottage cheese), an intermediary step in making solid cheese - the solid curds are pressed together and the liquid whey drained off.

Ghee, or clarified butter, is made by simmering unsalted butter until all water has boiled off. The clarified butter is spooned off carefully to avoid disturbing the milk solids that settled to the bottom of the pan. If ghee is kept in an airtight container to prevent oxidation and remains moisture-free, it can be stored for extended periods without refrigeration.
Ghee, or clarified butter, is used in religious rituals in Hinduism and Buddhism, and in Indian cooking.
