Cereal grains are seeds from mostly annual grasses –
• wheat is the primary cereal in the temperate regions,
• rice is primary in the tropical regions of Earth.
Other cereals include millets, sorghums, rye, oats, barley, maize.
Cereals provide more food energy to humans than any other crop.
The word cereal comes from Ceres, the Roman Goddess (Greek Demeter) of grain. The root word of Ceres is the Indo-European “ker”, meaning “to grow”, which is also the root for the words “create” and “increase”.
• January is Oatmeal Month
• July is Wheat Month

Southern Style Biscuits - preheat oven 450ºF |
Ingredients
* 2 cups all-purpose flour
* 1 tablespoon baking powder
* 1/2 teaspoon salt
|
* 1/2 cup shortening (very cold butter)
* 3/4 cup milk
Makes about 10 biscuits @ about 190 calories each.
|
Sift flour, baking powder, and salt together in large bowl.
Cut shortening in with fork.
Mix in milk for a soft dough that pulls away from sides of bowl.
Turn dough out on lightly floured surface and knead sparingly until dough is no longer sticky.
Pat or roll dough to 1/4" thick - then fold dough in half (2 layers will make your biscuits pull apart easily); cut with your favorite biscuit cutter (try a shape). Gather unused dough and repeat flattening and cutting.
Place on ungreased sheet, bake in preheated oven about 10 minutes until golden.
Hints - handle dough as little as possible; try buttermilk instead of milk.
The word biscuit is from the Latin biscoctus, meaning twice baked. Think of biscotti, or Melba toast. ... More biscuits? Seabiscuit, Bisquit Eater.
